My New Favorite Obsession

I'm kind of obsessed with beets right now.
I think I've eaten about 6 pounds of them in the last 3 days...seriously!
They fight heart disease, stroke, dementia, and peripheral vascular disease and are loaded with potassium, betaine, and folate!
After consuming obscene amounts of them lately, I feel I owe it to them to spread the word!
How do eat them? Boil, skin, add butter and salt...Ahh, perfection.

I loooove BEETS! My Dad used to grow them and as a child we ate them weekly. I like them boiled with butter, salt and pepper. I prefer mine a little undercooked so they are not mushy or super soft. My Mom always adds brown sugar to hers which I think sounds good but I'm afraid to try for fear I will love it!
